Coconut and Strawberry Popsicles

My son loves popsicles and while I can sometimes find ones that are really good for you, they are not good on my wallet. Plus it is so easy to make these desserts at home and for a small price too. I found my containers at the dollar store and the awesome thing is they are reusable.

Chocolate Chip and Coconut Meringue Cookies

meringuecookiesNow meringue cookies are naturally low in calories because they lack a lot of what makes a cookie, well a cookie. You won’t find flour or oil in these cookies which saves a lot on the scale. However these cookies can lack a lot of flavor so you have to really improvise with what you add in. This cookie is filled with yummy mini chocolate chips and a nice sweet coconut taste. If you don’t like coconut then go ahead and leave that out and add another tablespoon of mini chips.

Vegan Chocolate Mousse

veganchocolatemousseI love anything chocolate. If you couldn’t tell by my other posts (most which include chocolate and peanut butter one way or another) then let me help with that! Now sadly one of my really good friends is allergic to A LOT of things. One of those being dairy and it makes me so sad! But then again I get to try all of these cool recipes that I normally would not make. Now the coconut milk gives a wonderful coconut flavor but does not over power the chocolate.

Buffalo Chicken Dip

buffalochickendipIts SUPERBOWL SUNDAY and while my beloved Steelers are not playing today, I will enjoy the day as I always do! Who doesn’t love all awesome chips, dips, pizza, wings, and desserts that come with today? There is no reason you can not enjoy all of these wonderful things and still try and lose weight. I am a huge fan of allowing yourself to be human and not a diet machine. Enjoy what you love, but in a healthier way. Eat out, but be responsible about it. Understand that everything you put into your body will do something. I absolutely love hot wings. Duh its spicy and it is chicken. Then one day at a party I stumbled across buffalo chicken dip. This became the thing I would almost demand people make. Then I thought to myself that it could not be that hard! I decided to make a healthier version of this delicious dip.

Brownie Bites

browniebitesThese brownies have been a long time coming! I have made probably four or five dozen batches of brownies that were all nixed by the family. I tried just using a pumpkin puree instead of butter, eggs, and oil. Did not taste good at all and definitely held on to the pumpkin flavor way to much. Then I tried making one with mashed bananas and peanut butter but they too did not taste good at all. So I sat back down and looked back into a regular recipe for brownies and decided, just a few simple changes. No weird substitutions or exotic fruit. I wanted to keep as close to this recipe as possible. Also a smart idea I had (which came to me when I was day dreaming about the bite size brownies made at your local acme) that to help with portion control I would make little brownie cupcakes so no guessing on how much is really a serving size. If you don’t have a little mini cupcake tin, invest in one! Or just pour the batter into a large baking dish to help thin them out a bit and then cut it into 24 pieces.

Homemade Oatmeal Bars

oatmealbarsChewy bars and other store bought oatmeal bars are so popular in school lunches or as snacks for kids when they come home. Hey who wouldn’t love granola and chocolate and peanut butter and other yummy tasty things. However if you have ever look on the side of a box you probably can not pronounce the things that are included! I know because I tried this last night and I got through the first three words. These granola bars I can happily send to school with my son and not have to worry what he is putting into his system and also know they are healthy. These can sure be messy to make but fun for the whole family!
