So me and my sister went in on a $100 deal for 60 lbs of meat (with six people to feed in this house that was an amazing deal!) and I have come into contact with something other then boneless skinless chicken breast. That had been my staple for chicken since I have started weight watchers but now I am a little more comfortable cooking with other parts. I also realized that they were not boneless or skinless when I thawed them out but that’s okay just a little extra work never hurt anyone!
So if you have any Italian in your family you have definitely had eggplant parm. Most of the time the eggplant is breaded and fried and then the dish is loaded with cheese. Now my unofficial Uncle Louie makes a really mean eggplant parm but he has told me it is definitely not healthy. So I made it my personal mission to create a satisfying and healthier version of this dish.
It was such a beautiful day which meant we just had to get out and hike some of the places in our book. (this book is a gift my husband got me last year with 60 hikes in our area which we are working on completing) So when we got home I was thinking a great day to end a wonderful day was to grill turkey burgers for dinner. I can not wait until summer hits and we can grill every night!
Stuffed peppers always reminded me of something you could only get in a restaurant (and it be good of course). So earlier this week I was aimlessly watching my food network shows and Giada decided she was going to stuffed peppers. Well of course she was, the woman always did everything perfectly and makes it look so easy, well a caveman could do it. So I took a few notes promising myself that one day I would make Giada proud and make my own stuffed peppers. Well today was that day! Let me tell you, they are really easy and anyone with a little bit of cooking experience could pull this off.
Tuna can be so bland sometimes. You end up having to add massive amounts of seasonings and mayo. So not good! Here is an awesome way to doctor up tuna dish with a few fresh ingredients and a vegan cream sauce! Why a vegan cream sauce you ask? Well a normal cream sauce calls for milk and heavy cream and well in moderation those things are fine, but if you can replace them then why not! I also use homemade roasted peppers. While not so much homemade but definitely cheaper then buying roasted peppers that are canned.
Who doesn’t love Mexican food? Everyone has a favorite restaurant or meal that they hang on too. However many are afraid to try Mexican at home, but with this recipe, you can make all different kinds of tostadas. Try spicy beef with a hot salsa and black bean sauce underneath or ground turkey with salsa and kidney beans. This are fun to put together and make awesome leftovers. Try all different kinds of beans and vegetables every time your make these. The original recipe on ww calls for a fresh avocado and tomato topping, but the mix of avocado and sour cream gives a tangy taste to a delicious meal.
I love soup. If I am just cooking for myself, nothing is better then a nice hot bowl of tomato soup and a warm melted grilled cheese. So tonight I decided to try my hands at making homemade soup. Nothing sounded better then butternut squash soup, and that MAY be because I saw it on the food network the other day. Now I learned, the that more you process the broth, the smoother it will be. You don’t want your soup to look baby food though so make sure you give it a few couple good spins, and when you think its good give it a couple more.
