So me and my sister went in on a $100 deal for 60 lbs of meat (with six people to feed in this house that was an amazing deal!) and I have come into contact with something other then boneless skinless chicken breast. That had been my staple for chicken since I have started weight watchers but now I am a little more comfortable cooking with other parts. I also realized that they were not boneless or skinless when I thawed them out but that’s okay just a little extra work never hurt anyone!
So if you have any Italian in your family you have definitely had eggplant parm. Most of the time the eggplant is breaded and fried and then the dish is loaded with cheese. Now my unofficial Uncle Louie makes a really mean eggplant parm but he has told me it is definitely not healthy. So I made it my personal mission to create a satisfying and healthier version of this dish.
It was so nice today and we all know what that means! Nice weather and longer days means its time to brush the dust off the grills. Now normally the grill is only a man’s territory, but my daughter ended up with four girls so we all got to watch him make magic and even get some ideas too. Stuffed peppers always reminded me of something you could only get in a restaurant (and it be good of course). So earlier this week I was aimlessly watching my food network shows and Giada decided she was going to stuffed peppers. Well of course she was, the woman always did everything perfectly and makes it look so easy, well a caveman could do it. So I took a few notes promising myself that one day I would make Giada proud and make my own stuffed peppers. Well today was that day! Let me tell you, they are really easy and anyone with a little bit of cooking experience could pull this off.
Tuna can be so bland sometimes. You end up having to add massive amounts of seasonings and mayo. So not good! Here is an awesome way to doctor up tuna dish with a few fresh ingredients and a vegan cream sauce! Why a vegan cream sauce you ask? Well a normal cream sauce calls for milk and heavy cream and well in moderation those things are fine, but if you can replace them then why not! I also use homemade roasted peppers. While not so much homemade but definitely cheaper then buying roasted peppers that are canned.
My family loves pizza. It is a no brainer when we have a lot of people over and need an idea for dinner, we order from our favorite pizza shop. However it is not so wallet and waist friendly for myself and my family. I decided since I was in the mood for pizza I was going to make my own. Now I do not keep yeast in my house on a daily basis, I am horrible at making bread! So I did some research on non yeast doughs and with some testing and mix and matching came up with my favorite one. I also decided to make a homemade pizza sauce just for fun and I absolutely loved mine.
Now I love spicy food. Hot wings are no big deal to me. This dish really has a huge kick so if you are feeding kids or someone who doesn’t like the I would make a few small changes. Now aside from spicy food I also love my pasta so this dish is a two for one. I think that if you really love pasta you shouldn’t completely cut it out of your diet. First switch to a whole wheat pasta or if you like the “smart taste” variety change to that. I would suggest limiting your pasta to once a week or maybe even twice. I also despise meat sauces (even before joining weight watchers I didn’t like it) so I never use them. Try making your own sauce and use tons of different vegetables to flavor it.
