So if you have any Italian in your family you have definitely had eggplant parm. Most of the time the eggplant is breaded and fried and then the dish is loaded with cheese. Now my unofficial Uncle Louie makes a really mean eggplant parm but he has told me it is definitely not healthy. So I made it my personal mission to create a satisfying and healthier version of this dish.
My family loves pizza. It is a no brainer when we have a lot of people over and need an idea for dinner, we order from our favorite pizza shop. However it is not so wallet and waist friendly for myself and my family. I decided since I was in the mood for pizza I was going to make my own. Now I do not keep yeast in my house on a daily basis, I am horrible at making bread! So I did some research on non yeast doughs and with some testing and mix and matching came up with my favorite one. I also decided to make a homemade pizza sauce just for fun and I absolutely loved mine.

However many are afraid to try Mexican at home, but with this recipe, you can make all different kinds of tostadas. Try spicy beef with a hot salsa and black bean sauce underneath or ground turkey with salsa and kidney beans. This are fun to put together and make awesome leftovers. Try all different kinds of beans and vegetables every time your make these. The original recipe on ww calls for a fresh avocado and tomato topping, but the mix of avocado and sour cream gives a tangy taste to a delicious meal.
Its SUPERBOWL SUNDAY and while my beloved Steelers are not playing today, I will enjoy the day as I always do! I am a huge fan of allowing yourself to be human and not a diet machine. Enjoy what you love, but in a healthier way. Eat out, but be responsible about it. Understand that everything you put into your body will do something. I absolutely love hot wings. Duh its spicy and it is chicken. Then one day at a party I stumbled across buffalo chicken dip. This became the thing I would almost demand people make. Then I thought to myself that it could not be that hard! I decided to make a healthier version of this delicious dip.
One of my favorite appetizers to get is spinach artichoke dip. Anywhere we end up at, it is sure to be and it is always delicious. So with the Super Bowl coming up this weekend I was thinking of different recipes to serve for the family this definitely came to mind! This was super easy to mix together and I will forever be making it at home instead of getting it while eating out. If you are looking into keeping with fresh vegetables you can purchase fresh spinach and wash it and toss it into a salad spinner. Afterwards cut it down into small pieces.
Quesadillas are one of my favorite Mexican dishes. I even love to get them at places like Friendly’s or Fridays. However on ww they are a huge no! Even the appetizer ones carry a large point load. There really isn’t much that goes into these yummy cheesy tortilla filled dinners, but still I was worried I would lose what I loved the most while trying to kick the points down. However I surprised myself again! This recipe is one of my favorite kinds and you can add veggies and take out to get exactly what you want. I threw together a nice little homemade Spanish rice to add as my side to this yummy Mexican inspired dish. There is nothing like homemade rice to add a healthy kick to any meal.
I love meatball sandwiches. These and cheese steaks always scream cheat day to me! However with my this recipe, I could have meatballs every night of the week! You could lose the bread and add pasta for delicious spaghetti and meatballs! These are so easy to make you could more then one batch, toss it in a crock pot and serve them at a party!
