Tuna can be so bland sometimes. You end up having to add massive amounts of seasonings and mayo. So not good! Here is an awesome way to doctor up tuna dish with a few fresh ingredients and a vegan cream sauce! Why a vegan cream sauce you ask? Well a normal cream sauce calls for milk and heavy cream and well in moderation those things are fine, but if you can replace them then why not! I also use homemade roasted peppers. While not so much homemade but definitely cheaper then buying roasted peppers that are canned.
I love soup. If I am just cooking for myself, nothing is better then a nice hot bowl of tomato soup and a warm melted grilled cheese. So tonight I decided to try my hands at making homemade soup. Nothing sounded better then butternut squash soup, and that MAY be because I saw it on the food network the other day. Now I learned, the that more you process the broth, the smoother it will be. You don’t want your soup to look baby food though so make sure you give it a few couple good spins, and when you think its good give it a couple more.
Its SUPERBOWL SUNDAY and while my beloved Steelers are not playing today, I will enjoy the day as I always do! Who doesn’t love all awesome chips, dips, pizza, wings, and desserts that come with today? There is no reason you can not enjoy all of these wonderful things and still try and lose weight. I am a huge fan of allowing yourself to be human and not a diet machine. Enjoy what you love, but in a healthier way. Eat out, but be responsible about it. Understand that everything you put into your body will do something. I absolutely love hot wings. Duh its spicy and it is chicken. Then one day at a party I stumbled across buffalo chicken dip. This became the thing I would almost demand people make. Then I thought to myself that it could not be that hard! I decided to make a healthier version of this delicious dip.
I love things like egg, chicken or tuna salad. They are easy to whip up on a Sunday afternoon and have lunch all week. Egg salad SHOULD be low in calories, but however adding in all the mayo and definitely takes it to a whole other level. I also have found that some places even put extra sugar into egg salad…umm hello! So you should have no reason to not make this at home with how easy it is and only takes a few minutes out of your day. I also love making it with my son and let him pick what vegetables go in and helping me stir it together.
One of my favorite appetizers to get is spinach artichoke dip. Anywhere we end up at, it is sure to be and it is always delicious. So with the Super Bowl coming up this weekend I was thinking of different recipes to serve for the family this definitely came to mind! This was super easy to mix together and I will forever be making it at home instead of getting it while eating out. If you are looking into keeping with fresh vegetables you can purchase fresh spinach and wash it and toss it into a salad spinner. Afterwards cut it down into small pieces.
I am sitting here in a half food coma staring outside at the last of the snow left from yesterdays sudden surprise. I knew this morning I wanted to make something warm and filling for dinner and immediately I thought of making Greg go all the way out to Boston Market for chicken pot pies. However I knew he would complain about how it would shrink his wallet to much and I knew it would over extend my waist line! So this morning I asked for some feedback on my facebook about what everyone loved in their chicken pot pie. I got tons of different answers and decided to try and incorporate what I thought would make an awesome one!
One of my family favorites and a staple in my weekly dinner rush is yummy and healthy Cheeseburger Soup. I absolutely love this recipe! While I am a stay at home and this is an easy recipe for me, if you work during the week I would save trying this one for the weekend. I also love prepping this just around lunch time when I am already in the kitchen making lunch that way its ready just around the time Rion gets home from school and Greg gets home from work. If you don’t have a slow cooker you can make it on the stove, but I haven’t tried that one yet. I would really recommend purchasing a crock pot, it is my absolute favorite!
