Homemade Mini Corndogs

corndogsOh pinterest will be the death of me, or at least my bank account. So while browsing through the wonderful website the other day I came across these awesome pictures of food in a mini muffin tin, but like everything I really love the picture only led to a random website with the picture, no real article. But hey I know how to cook! No need for a recipe I will just make my own. And so I did. Now my family loves corn dogs. One of my cheats I do is if we go to the local movie theater (which is never these days because for three of us its close to $40) I always allow myself to get the corn dogs. I mean once in a great while won’t kill you. Well my husband decided he needed more so he went out and bought a box of the frozen ones. No fair to me at all. They are my ultimate demise.

Tuna Pasta Salad

tunapastasaladTuna can be so bland sometimes. You end up having to add massive amounts of seasonings and mayo. So not good! Here is an awesome way to doctor up tuna dish with a few fresh ingredients and a vegan cream sauce! Why a vegan cream sauce you ask? Well a normal cream sauce calls for milk and heavy cream and well in moderation those things are fine, but if you can replace them then why not! I also use homemade roasted peppers. While not so much homemade but definitely cheaper then buying roasted peppers that are canned.

Homemade Whole Wheat Pizza Dough and Sauce

My family loves pizza. It is a no brainer when we have a lot of people over and need an idea for dinner, we order from our favorite pizza shop. However it is not so wallet and waist friendly for myself and my family. I decided since I was in the mood for pizza I was going to make my own. Now I do not keep yeast in my house on a daily basis, I am horrible at making bread! So I did some research on non yeast doughs and with some testing and mix and matching came up with my favorite one. I also decided to make a homemade pizza sauce just for fun and I absolutely loved mine.

Butternut Squash Soup

butternutsquashI love soup. If I am just cooking for myself, nothing is better then a nice hot bowl of tomato soup and a warm melted grilled cheese. So tonight I decided to try my hands at making homemade soup. Nothing sounded better then butternut squash soup, and that MAY be because I saw it on the food network the other day. Now I learned, the that more you process the broth, the smoother it will be. You don’t want your soup to look baby food though so make sure you give it a few couple good spins, and when you think its good give it a couple more.

Egg Salad

eggsaladI love things like egg, chicken or tuna salad. They are easy to whip up on a Sunday afternoon and have lunch all week. Egg salad SHOULD be low in calories, but however adding in all the mayo and definitely takes it to a whole other level. I also have found that some places even put extra sugar into egg salad…umm hello! So you should have no reason to not make this at home with how easy it is and only takes a few minutes out of your day. I also love making it with my son and let him pick what vegetables go in and helping me stir it together.

Quesadillas and Spanish Rice

quesadillasQuesadillas are one of my favorite Mexican dishes. I even love to get them at places like Friendly’s or Fridays. However on ww they are a huge no! Even the appetizer ones carry a large point load. There really isn’t much that goes into these yummy cheesy tortilla filled dinners, but still I was worried I would lose what I loved the most while trying to kick the points down. However I surprised myself again! This recipe is one of my favorite kinds and you can add veggies and take out to get exactly what you want. I threw together a nice little homemade Spanish rice to add as my side to this yummy Mexican inspired dish. There is nothing like homemade rice to add a healthy kick to any meal.

Chicken Pot Pie

chickenpotpieI am sitting here in a half food coma staring outside at the last of the snow left from yesterdays sudden surprise. I knew this morning I wanted to make something warm and filling for dinner and immediately I thought of making Greg go all the way out to Boston Market for chicken pot pies. However I knew he would complain about how it would shrink his wallet to much and I knew it would over extend my waist line! So this morning I asked for some feedback on my facebook about what everyone loved in their chicken pot pie. I got tons of different answers and decided to try and incorporate what I thought would make an awesome one!
