Pinterest will most likely be the death of me…or at least my wallet. For some reason I have been craving sweet things these past couple of weeks. Part of me wonders if it is because I stayed away from them over the holidays. Well this one “recipe” kept popping up and I had to try it. I use quotations because really even my 7 year old could throw this one together.
On the theme of summer I have another awesome recipe that not only will make healthy conscious parents happy but kids as well. My son loves popsicles and while I can sometimes find ones that are really good for you, they are not good on my wallet. Plus it is so easy to make these desserts at home and for a small price too. I found my containers at the dollar store and the awesome thing is they are reusable.
I love anything chocolate. If you couldn’t tell by my other posts (most which include chocolate and peanut butter one way or another) then let me help with that! Now sadly one of my really good friends is allergic to A LOT of things. One of those being dairy and it makes me so sad! But then again I get to try all of these cool recipes that I normally would not make. Now the coconut milk gives a wonderful coconut flavor but does not over power the chocolate.
So with my surgery in September and my healthy outlook this past holiday season, I did not do as much baking as I normally would have and I am definitely paying for it now. While googling last night I came across different recipes that were flour less and other healthy things. So obviously today after my massage I wandered over to the grocery store for some supplies. Now I have only ever baked cookies with flour so these were definitely interesting but are amazingly good. I added oats and wheat germ for a little crunch but if you want grain free, leave them out. Also if you are vegan, go ahead and swap out the mini chocolate chips for a vegan chocolate chip! These are so tasty and good for you.
These brownies have been a long time coming! I have made probably four or five dozen batches of brownies that were all nixed by the family. I tried just using a pumpkin puree instead of butter, eggs, and oil. Did not taste good at all and definitely held on to the pumpkin flavor way to much. Then I tried making one with mashed bananas and peanut butter but they too did not taste good at all. So I sat back down and looked back into a regular recipe for brownies and decided, just a few simple changes. No weird substitutions or exotic fruit. I wanted to keep as close to this recipe as possible. Also a smart idea I had (which came to me when I was day dreaming about the bite size brownies made at your local acme) that to help with portion control I would make little brownie cupcakes so no guessing on how much is really a serving size. If you don’t have a little mini cupcake tin, invest in one! Or just pour the batter into a large baking dish to help thin them out a bit and then cut it into 24 pieces.
I love cookies. Oh do I love cookies. Sometimes I will buy a big thing of reduced fat Oreos and hide them so when I find them its like an awesome treat! However those cookies, reduced fat or not, are definitely not good for you. This recipe uses mashed bananas instead of butter and peanut butter instead of oil. If you or someone who will be eating these have a peanut allergy just leave the peanut butter out and add in some unsweetened apple sauce. These are a good filling snack for between when the kids get home from school and when dinner is ready.
I use my banana ice cream recipe all the time! It is completely healthy and dairy free so my husband can enjoy it too. So then I thought about all the wonderful ways to enjoy it and tried tons of different kinds. My son loves when I break up candy and add it in (moderately of course!) and he thinks it is one of the best treats ever. Then while in the store the other day I came acrossed some low fat graham crackers and remembered when I first started weight watchers one of my favorite desserts was to take fat free cool whip and spread it between to graham crackers and then freeze them. They tasted like heaven compared to some of the “fat free” desserts I was forcing on myself. So while standing in the store a light switched turned on and BAM! So I bought everything I needed and I am here to introduce my banana ice cream sandwiches.
