I love anything chocolate. If you couldn’t tell by my other posts (most which include chocolate and peanut butter one way or another) then let me help with that! Now sadly one of my really good friends is allergic to A LOT of things. One of those being dairy and it makes me so sad! But then again I get to try all of these cool recipes that I normally would not make. Now the coconut milk gives a wonderful coconut flavor but does not over power the chocolate.
Now when you buy the can of coconut milk, let it chill over night in the fridge before using.Also remember to chill the mixing bowl and whisk you are going to use as well.
What you will need:
- 1 can of whole coconut milk
- 1 box of sugar free instant chocolate pudding mix
- 1 tbsp of sugar in the raw
What you need to do:
- Empty the coconut milk into a large mixing dish. Mix in the sugar and whisk for a couple minutes. Allow to chill in freezer for about 10 to 15 minutes. Whisk again and then add in the box of instant pudding. Mix until well blended and you have a mousse consistency.
This recipe serves 6 people and just 3 ww points a person! This is also a tasty dessert for all your vegan friends as well. Enjoy this with a dollop of coconut cream.
