Quesadillas and Spanish Rice

quesadillasQuesadillas are one of my favorite Mexican dishes. I even love to get them at places like Friendly’s or Fridays. However on ww they are a huge no! Even the appetizer ones carry a large point load. There really isn’t much that goes into these yummy cheesy tortilla filled dinners, but still I was worried I would lose what I loved the most while trying to kick the points down. However I surprised myself again! This recipe is one of my favorite kinds and you can add veggies and take out to get exactly what you want. I threw together a nice little homemade Spanish rice to add as my side to this yummy Mexican inspired dish. There is nothing like homemade rice to add a healthy kick to any meal.

My Spanish rice recipe is just like the quesadillas one, you can add or take out any veggies you want to make it your own! Both recipes are weight watchers friendly and quick and easy to make!

Here is what you will need: (for quesadillas)

  • 1 and 1/2 chicken breasts cubed
  • 1/2 tsp of salt
  • 1/2 tsp of garlic powder
  • 1/2 tsp of black pepper
  • 1/2 tsp of cayenne pepper
  • 1/2 tsp nutmeg
  • 1/2 tsp of paprika
  • 6 whole wheat tortillas
  • 3 garlic cloves diced
  • 1/2 cup of uncooked chopped onions
  • 1/2 cup of uncooked chopped green peppers
  • 1/2 cup of uncooked chopped red peppers
  • 1/2 cup of uncooked chopped jalapeno peppers
  • 1/2 cup of uncooked shredded zucchini
  • 1/2 cup of uncooked mushrooms
  • 1 cup of reduced fat jack and cheddar cheese shredded
  • 12 tbsp of fat free sour cream

Here is what you do:

  1. Preheat the oven to 375 degrees F.
  2. Add all the spices to a zip-lock bag then toss in your cubed chicken. Shake really well so the spices get on everything! Heat a lightly coated skillet on medium heat. When the chicken is all coated, transfer them to the skillet and let them cook, about 7 to 8 minutes. Remove from pan and set aside on a plate.
  3. Lightly coat the skillet again and add in the garlic and onions first. Cook for about 3 to 4 minutes and then add the rest of the veggies in. Cooke for another 5 to 6 minutes. Once all the vegetables are cooked up nice and soft add the chicken back in and mix well.
  4. On a baking sheet lay out six tortillas (you might have to assemble a few to make room for all six) and spread the cup of cheese between the six tortillas. Now distribute the chicken and veggies evenly onto each tortilla. Make sure to only add it to one half giving yourself a 1/2 inch edge all around. Now fold over to create the quesadilla look. Bake in the oven for 10 to 12 minutes or until cheese is melted and the tortilla is crispy. Now cut into four pieces and serve with 2 tbsp of fat free sour cream.

This recipe serves six people and carries only 6ww points per a serving! With all the veggies and chicken to fill the tortillas it will keep you nice and full. You could even enjoy this as a quick lunch one day! Now here is the recipe for the amazing homemade rice!

Here is what you will need: (Spanish Rice)

  • 1 cup of brown rice
  • 1 cup of water
  • 1/2 tsp of salt
  • 1/2 cup of diced tomatoes
  • 1/2 cup of uncooked onions diced
  • 1/2 cup of green chilies
  • 2 cloves of garlic
  • 3 tbsp of hot sauce

Here is what you do:

  1. In a sauce pan bring the water to a boil. Once brought to a boil add in the brown rice and the salt. Cover and allow to simmer for about 4 to 5 minutes. In a separate pan brown the garlic and onions in a pan. Once browned and rice is done, combine the rice and onions and garlic. Now add in the diced tomatoes, green chilies, and hot sauce. Mix well and fluff before serving.

This recipe serves six people at 3ww points per a serving. This hearty rice has a kick with the hot sauce and a sweet tomato taste. Enjoy with all your Mexican dishes without feeling bad!
